BBQ Chicken Quesadillas

My Mum got my sister-in-law & I a cook book for Christmas, called Eat what you Love. It’s great! It’s full of low calorie, fast and easy recipes. As I mentioned earlier today – last night I tried the BBQ Chicken Quesadillas. They were AWESOME!

It’s not often that I find recipes that Alex & I and the kids want to eat, but this cook book is full of them. Also, as most of you know – I HATE to cook, so easy is what I am looking for, and this recipe delivered that.

BBQ Chicken Quesadillas Makes 4 servings

Ingredients 4 (8-inch) reduced-carb, high fiber flour tortillas 2 tablespoons BBQ sauce, divided 1 cup shredded cooked chicken breast, divided 2/3 cup reduced-fat Mexican cheese blend, divided 1. Spray a large nonstick skillet with cooking spray and place over medium-high heat. 2. Place 1 tortillas in the skillet and spread half the BBQ sauce over it. Add half the chicken to the tortilla. Sprinkle half the cheese on top. Cover with another tortilla. Cook for 2 mins or until the cheese begins to melt and the bottom of the tortilla is golden brown. Flip (carefully) the quesadilla and cook for another 2-3 minutes. 3. Repeat with the remaining ingredients. 4. Cut each quesadilla into 8 portions before serving. Nutritional Information per serving (1/2 Quesadilla) Cals 140, Carbs 13, Fat 4.5g
